Athesis Brut Rosé Alto Adige D.O.C. 75cl (2018) KETTMEIR

This an all-round inspiring classic method sparkler from noerthern Italy! The Pinot Nero grapes, the main constituent of the cuvé, are vinified as a Rosé wine with brief maceration on the skins and subsequent soft pressing. The Chardonnay, harvested from areas well-suited to sparkling wine production, are also soft-pressed. The two varieties are fermented separately before being assembled and 'liqueur de tirage' added in the spring to initiate secondary fermentation in bottle in the cellars. The wine then rests on its lees for at least 22 months before being disgorged and released for sale. The result is a wine of pale pink colour with peach reflections and small, long-lasting bubbles. On the nose there are fruity hints of raspberry and sweet spices all wrapped up in lovely yeasty notes. Dynamic yet refined on the palate with an elegant freshness and delicate creamy mouthfeel.
