The Dolcetto is seen as the most prestigious of grape varieties at Pelissero. The microclimate and soil of the Treiso region is unique, giving the wine a good tannic structure as well as sweetness and softness. The Piemontese dialect name Munfrina originated from the ancient owner of the lands, the lady of Monferrina.
Controlled temperature fermentation and short maceration of 4/5 days in order to preserve as much fragrance and drinkability as possible. After a cold decanting, it rests in stainless steel cask for 6/7 months, plus 1 month in the bottle. Its colour is a beautifully bright purple-red, with an open and very fruity bouquet. Its complex taste mixes well between tannins and alcohol resulting in a tasty and pleasant wine. The aftertaste is slightly bitter with hints of almond, typical of the Dolcetto.
