Following initial fermentation part steel, part barriques, the grapes are re-fermented in autoclaves followed by refinement for at least 30 moon cycles plus 12 months in bottle. The result is a very pleasant sparkling wine with subtle yet delightful white fleshed fruit aromas and a hint of minerality. In the mouth it is long lasting and generously structured with lots of citrus compliments.
