    Bon fillet of ham is crafted from the same fresh legs used in the production of Culatta, a prestigious cut considered the best and leanest part of Italian pigs' legs. This prized "rump" of the rear hind leg is the same cut used for Parma ham, sourced exclusively from pigs born and reared in select farms across 10 regions of central and northern Italy. Unlike Parma ham, Culatta Gemma undergoes a different process—salted, massaged, and air-dried for at least one year, resulting in a more refined and intense flavour. Tanara's production in Langhirano benefits from the region's ideal geography, where salty winds, purified by the Apennine foothills, create the perfect conditions for natural ageing, contributing to its distinctive aroma.
