The company is located on the southern slopes of Etna, halfway between the Ionian Sea and the mountains, in a natural context rich in biodiversity where the best varieties of fruit and vegetables thrive thanks to the fertility of the volcanic soil and the generous sun. Intensely perfumed, it is treated by safeguarding the essential oils which are extracted by steam and added in the process. A delicate addition of turmeric completes the taste-olfactory range without becoming dominant. A Strong flavour that goes well with aged cheeses in particular, Caciocavallo in its more aged versions, pecorino cheeses or Parmigiano Reggiano, if suitably aged. The combination with white meats is very interesting, but also with pork if used in recipes with more delicate flavours.
