Campostarne 75cl (2021) COSTARIPA MATTIA VEZZOLA

A wine of perfect acidity and freshness which is destined for a long life, 6-8 years in fact! Harvest is always by hand and the wine undergoes traditional vinification on skins, with regular fermentation and prolonged maceration, allowing for more elegance, structure and complexity. The wine ages in 228-litre old white oak casks for about 12 months before spending a further six months resting in the bottle. The result is a wine of deep ruby red colour, crystalline and intense. Its bouquet is an invitation of violets and ripe red forest fruits, with welcoming notes of spice, pepper and roasted nuts. In the mouth it is ethereal and sinuous, of excellent harmony and structure, with a pleasantly textured sensation. Full length and persistence on the finish plus a delicate freshness defining its particular character. Best served with cured meats and medium-mature cheeses, ravioli and egg pasta with ragù, carpaccio, red meats and game, or even boiled meats.
