The grapes are handpicked and whole bunch pressed to gently extract their delicate juices, then fermented on full solids in French oak barriques using indigenous yeast naturally found in Mount Riley’s winery and vineyard. Finally the wine is stirred on the lees in order to build weight, texture and complexity. The result is a wine with a pale straw colour and a stoney fruit bouquet with citrus, gunflint, spice and toast hints. It is full of complexity and character with a balanced, lengthy flavour that drinks perfectly now and even up to 2022 if stored correctly. Great as an aperitif or paired with light red meats, chicken, seafood or cheeses.
