“Farro” is often translated as “spelt” but it is actually another variety of “ancient” grain in the wheat family. Farro Perlato is farro which has had a portion of the outer bran removed so it cooks faster and does not require soaking - it can be boiled in about 20 minutes or steamed in about 30. The grain is rich in fiber, protein, and magnesium and can be cooked like rice. Its gluten structure is different than modern wheat so people with wheat allergies can usually eat it without any problems (although it is not for those with celiac disease).
