From certified organic vineyard in Montefalcione, only the best grapes are used to produce this wine. Grapes are carefully selected and harvested manually during the coolest hours of the day. Soft pressing is achieved through a pneumatic press. This is to maintain the natural, crisp freshness of the grapes, without undergoing a secondary fermentation process called malolactic fermentation, which would otherwise impart a smoother and creamier texture.
Best served with seafood, especially shellfish, pasta with light sauces, and white meats.
