Kalamata olives originate from the Peloponnese peninsula in southern Greece. The trees have much larger leaves than other types of olive trees and absorb more sunshine, thus giving the olives their dark purple colour, dense texture and superb flavour. They’re more bitter than the more common black olives, but they’re brined in water, salt, and red wine vinegar, which mellows their bitterness and softens the flesh.
