Pane Carasau is a traditional Sardinian flatbread, distinguished by its thin, crispy sheets. Originally made by shepherds for its long shelf life, it dates back as far as 1000 BC. Also known as carta musica (sheet music) due to its resemblance to parchment used for sacred music, it is the most famous Sardinian bread worldwide.
Made from durum wheat semolina, salt, yeast, and water, its production was once a labour-intensive process requiring three women. Even today, the bread is carefully removed from the oven, skillfully cut along its circumference, and separated into sheets. These are stacked with the porous side facing outwards before being baked again to achieve its signature crispness and golden hue, known as carasatura.
