Optimal weather conditions prevailed during this vintage. There were good spring rainfalls, and temperatures in July and August remained moderate, with a few beneficial rainstorms. These conditions allowed the vines to lead grapes to perfect maturation.
After some very early vintages, in 2004 there was a return to a 'normal' harvest time, beginning on September 20th for Sangiovese.
The grapes used are particular clones of Sangiovese, locally known as 'Brunello.' The yield for the 2004 vintage was 55 q/ha. Manual harvesting was conducted with rigorous selection of the best bunches, initially in the vineyard and subsequently on the selection belt in the cellar.
Fermentation occurred at controlled temperatures below 30°C. There was a 25-day maceration period in wide and short stainless steel tanks, facilitating greater contact between skins and must for better polyphenolic extraction. Daily punching down was carried out in the morning, with pumping over in the evening.
The wine was aged for 4 years in Slavonian and French oak casks, followed by over 2 years of refinement in the bottle, all in a conditioned environment.
