This cooked ham is made using pork of roughly 12kg including the bone. After accurate deboning, using a similar technique to that of Culatello, just the heart of the ham remains. Enriched with Black Summer Truffle flakes and cooked in a mild brine, it offers a delicate flavour enhanced by the truffle's unique aroma. It has a delicate taste, well characterised by the addition of the black truffle giving its unique aroma. Visible truffle pieces contribute to its traditional appearance and high-quality taste.
