Schioppettino is also referred to as 'Ribolla Nera'. The grapes are handpicked and collected in trays, spread out over mats and dried where their flavours and body are further enhanced. This is followed by destemming and fermentation on the skins for about 3 weeks followed by 18 months refinement in Allier French oak barriques plus a further 18 months in bottle.
