The Jago area has always been considered one of the finest spots for Amarone due to its unique microclimate. This area is renowned for its Corvina, Corvinone and Rondinella grapes, which are destined for the production of Domini Veneti's finest wine: Amarone Vigneti di Jago. The grapes are handled with the utmost care during the drying process, or appassimento, which results in a wine with a distinctive bouquet, as well as huge intensity and power. This wine goes through "appassimento" for 100-120 days, followed by a gentle pneumatic pressing, 15 days of cold maceration, fermented and later post fermentation maceration on skins for a total of 35 days. The wine is then racked into new French Allier and Never oak barriques for malolactic fermentation and ageing for about 24 months, plus a final maturation in bottle for a further 12 months before release. The result is a very intense red colour, with light violet hints, and a complex, spicy, ethereal yet full perfume, with notes of vanilla and dried fruits. On the tongue it is full bodied, with mellow tannins giving softness and elegance along with flavours of dried fruit, spices and tobacco. A fine companion for all grilled or braised meat and game dishes, perfect with mature cheese, but also excellent during after-dinner conversation.
