‘Mirage’ Gavi D.O.C.G. 75cl (2024) BERSANO

This wine, crafted from Cortese grapes grown in the Apennine lands of Gavi, situated between Piemonte and Liguria, exemplifies excellence and unique character. The production area benefits from calcareous clay soils and a climate ideal for the Cortese variety. Harvested manually in the second half of September, only the best bunches are selected. The grapes undergo a soft pressing, with fermentation in stainless steel tanks at low temperatures until all the sugar is consumed. The wine is then aged in stainless steel tanks to preserve its fresh and vibrant profile. This wine features a bright straw-yellow colour with green highlights. Its bouquet is distinctive and fragrant, marked by refined floral notes and intense hints of pineapple and peach. On the palate, it is fresh, harmonious, and elegant, boasting a full yet delicate body. The balanced acidity complements its fruity and persistent aftertaste. With an alcohol content of 12.5% abv, it is best enjoyed young. Serve at a temperature of 8-10°C to fully appreciate its qualities. It makes an excellent aperitif and pairs ideally with appetizers, seafood, and fish dishes.
