Produced exclusively from Cannonau grapes grown in the clay-limestone soils of the Is Crabilis estate in Ussana, this wine reflects the essence of southern Sardinia. The vines, averaging 25 years of age, are cultivated as espaliered bushes and hand-harvested in late October. Fermentation and maceration last around 30 days at a controlled temperature, followed by malolactic fermentation and refinement in stainless steel to preserve the wine’s authentic character.
