This classic P.G.I. Mortadella is natural, light and digestible and is produced in compliance with the specifications of the Bologna Consortium of Mortadella. For the Mortadella Del Santo only meat from the shoulder can be used; it is skinned, any excess fat is removed, and then the meat is gorged to place pieces of natural fat before being stuffed into beef bladders and hand-tied. A mild seasoning with fresh garlic and some pistachio gives this mortadella an inviting aroma, and an appetisingly light taste. It stands unique thanks to the skillful balance of flavours.
