Produced in the rolling hills of Montalcino, Siena, the Olmaia vineyard sits at an average altitude of 350 metres on the Sant’Angelo hill, facing South-Southwest. The organic vineyard, planted in 2005, benefits from its optimal exposure to sunlight.
The 2018 season experienced winter rains and some snow, replenishing the soil. Spring was mild with occasional rains, while the summer months brought consistent heat, with light rains in August and temperatures averaging 25°C. September brought a mix of heat and rain, enabling balanced ripening. Harvest began mid-September, with a meticulous hand-selection process to ensure only the finest Cabernet Sauvignon grapes were chosen.
Fermentation took place in 50-hectolitre stainless steel tanks, with 12–15 days of maceration at 25°C. Pump-overs and long "délestages" on the 5th and 7th days ensured optimal extraction. Malolactic fermentation was followed by ageing in medium-toast French oak barrels (95%) and American oak barrels (5%) for 24 months. The wine naturally stabilised during its second winter in wood, then matured further in bottles after bottling in July 2021.
