Verjago Valpolicella D.O.C. Classico Superiore 75cl (2022) DOMINI VENETI

Its name derives from "Veriacus", which was associated strongly to the Negrar Valley during the Middle Ages. The Verjago is an extraordinary Valpolicella where the elegance and warmth typical of this wine find their true expression. This wine is the fruit of an extensive quality project carried out by Cantina Valpolicella Negrar over a number of years, and has led to the identification of the best microclimates and terroirs within the Negrar Valley. The grapes have been carefully selected from hillside vineyards and hand-picked into small crates, and are then left to dry for 40 days in temperature-controlled rooms before vinification. The wine is then matured for over a year in large oak barrels and then for a further 5 months in bottle. The final result is a Super Valpolicella of great distinction, with an intense ruby red colour with hints of violet. Its perfume is complex and spicy, with notes of red fruits and a hint of ripe cherries. On the tongue it is warm, smooth, fine and elegant. A fine companion for all meat dishes and mature full-flavoured cheeses.
